Yields: 8-12 Servings
Ingredients
For Tofu Turkey:
4-5 (14 ounce) packaged firm tofu, trained and crumbled
1 cupnutritional yeast flakes
Sea salt and pepper, to taste
2-3 tablespoons dried herbs of your choice (optional)
For Basting Sauce:
1/4 cup maple syrup
1/4-1/2 fresh seasonal herbs like rosemary, thyme, sage, etc.
1/4 cup toasted sesame oil
1/4 cup Bragg’s Liquid Aminos (or lower sodium shoyu)
Salt and pepper, to taste
For Stuffing:
10-12 cups prepared stuffing of your choice, cooked according to package directions (or homemade)
Optional Toppings:
Fresh cranberries
Fresh herbs
Gravy of choice
Directions
1Preheat oven to 400 degrees F.
2Cook desired stuffing according to package directions or homemade and allow to cool.
3Mash tofu very well and add nutritional yeast. Mix together with your hands until thoroughly combined. Set aside 1/3 of the tofu mixture.
4Line a large colander with cheesecloth. Press tofu into bottom and sides of colander, about 1/2 inch thick creating a hollow crater. Once the tofu has been patted down firmly along the sides, fill the center with stuffing. Place the reserved tofu on top of the stuffing to seal it in.
5Very carefully, flip the tofu turkey onto a parchment lined cooking sheet. Peel away the cheesecloth. Pour and brush on about 3/4 of the basting sauce.
6Place tofu turkey into oven and bake for 1 hour, basting with remaining sauce every 20 minutes.
7Transfer to a serving platter and top with fresh cranberries and herbs (optional).
8Serve with preferred gravy and side dishes.
** Basting sauce adjusted to be lower fat, may add water as needed to thin
