2 acorn squash, halved lengthwise and seeded
fine sea salt and freshly ground pepper
Pinch freshly grated nutmeg
1/4 teaspoon orange zest
1/4 cup orange juice, freshly squeezed
1 tablespoon pure maple syrup
1 teaspoon fresh ginger root, peeled and grated
Pinch cayenne pepper (optional)
1Preheat oven to 425º F.
2Place squash halves in a 9 x 13-in baking dish.
3Pour water around the squash halves, enough to cover the bottom of the baking dish by 1/8 inch.
4Season each squash half with salt, pepper and nutmeg.
5In a small bowl, whisk together orange zest, juice, maple syrup, ginger, cayenne pepper and a pinch of salt.
6Place one tablespoon of mixture into the cavity of each squash half. Using a pastry brush, brush mixture over squash.
7Cover baking pan with aluminum foil.
8Bake 30 minutes.
9Uncover, baste squash with any accumulated juices, and bake uncovered until squash is lightly glazed, about 10 minutes.
