Glazed Acorn Squash with Orange and Ginger by Robert Walker | Nov 17, 2016 | 0 comments EmailTweet 0 Full-screen Glazed Acorn Squash with Orange and Ginger By robertwalker Side Dish American, Holiday Dishes Baking November 17, 2016 Cook: 40 mins Ingredients 2 acorn squash, halved lengthwise and seededfine sea salt and freshly ground pepper Pinch freshly grated nutmeg 1/4 teaspoon orange zest1/4 cup orange juice, freshly squeezed1 tablespoon pure maple syrup 1 teaspoon fresh ginger root, peeled and gratedPinch cayenne pepper (optional) Directions 1Preheat oven to 425º F. 2Place squash halves in a 9 x 13-in baking dish. 3Pour water around the squash halves, enough to cover the bottom of the baking dish by 1/8 inch.4Season each squash half with salt, pepper and nutmeg.5In a small bowl, whisk together orange zest, juice, maple syrup, ginger, cayenne pepper and a pinch of salt. 6Place one tablespoon of mixture into the cavity of each squash half.
